Tortilla Soup in crockpot


GF Tortilla Soup in crockpot
Gluten free, Dairy free, Egg free

In crockpot add:

1 (2 ½ to 3 lb) rotisserie chicken, cut up and skin removed but in bottom of crockpot.
3 cups water

In blender add the following and puree

1 large can (10oz) Ro-Tel tomatoes
1 medium onion, pureed
1 large carrot pureed ( I don’t use carrot sometimes)
2 to 4 Tbspns minced Cilantro

Pour pureed mixture into crockpot and add the  following spices and last few ingredients

2 tsp parsley
2 Tbspn soup base, chicken flavoring
1 tsp lemon pepper seasoning
1 large garlic clove
1 can creamed corn (you can puree this to but you can’t really taste chunks in soup because it is creamed)
1 ½ cups lite Half and Half

Cook 2 potatoes and mash them or puree them and then add them to crockpot.

Cook on high for 2 to 4 hours.

If the soup in to thick add a little water to thin it down to desired consistency.


Serve with:

Cheddar cheese
Monterey jack cheese
Tortillas chips
Sour cream
Lemons
Black olives
Thin tortilla salad chips
Avacado
