Gluten Free Panda Orange

Chicken:
1-Cut up
chicken tenders:
10 to 12 chicken tenders
boneless skinless, chopped into bite sized pieces and set aside
2-In a gallon
baggie add the following in baggie:
1 egg
1 1/2 teaspoons garlic salt
1 tsp pepper
1 TBSPN olive oil
Squish up ingredients in
baggie and then add the cut up chicken pieces into baggie. Coat all chicken well with egg mixture.
3-In another
gallon size baggie add the following:
1/2 cup cornstarch
1 cup brown rice flour
1/8 tsp nutmeg
1/2 tsp red chili pepper
1/2 tsp paprika
Scoop out the egg coated
chicken with a slotted spoon and place in flour mixture. Close baggie and coat chicken well with flour
mixture.
4-Heat ½ inch
olive oil in large skillet until hot. Cook all flour coated chicken
about 5 minutes on each side (or until golden brown). Place on napkin covered plate and let oil
drain off.
Orange sauce:
1-Orange
Sauce, mix together and set aside:
1 1/2 tablespoons gluten
free soy sauce
1 1/2 tablespoons water
5 tablespoons sugar
5 tablespoons white vinegar
zest of 1 orange
2-Clean skillet
to cook sauce:
1 TBSPN garlic, minced
1/4 cup green onion, chopped
1 tablespoon apple juice
1/2 teaspoon sesame oil
Put oil, garlic, green
onions and apple juice in skillet and cook for about 5 minutes or until green
onions and garlic brown slightly. Add
the above sauce mixture to the mixture in the skillet. Cook for another 2 minutes on medium
low.
3-Thicken
sauce:
1/4 cup water
1 TBSPN cornstarch
Mix the water and cornstarch
together and add to the sauce. As it
starts to thicken slightly add the chicken pieces already cooked and mix the
sauce over the chicken as it continues to thicken.
Serve over rice and enjoy,
