Almond Spinach Salad

Almond Spinach Salad


1 bag (10oz) fresh spinach
3/4lb fried bacon, crumbled
1 cup almond slivers, toasted**
1 Granny Smith apple, sliced very thin

Wash spinach and dry well.  Tear into bite sized pieces making sure to remove any large stems.  Add bacon, apple, and toasted almonds.  Toss with dressing immediately before serving.

**To toast almonds, bake them in a 350 degree oven for 8-10 minutes.  (It may take a little longer depending on how hot your oven bakes.)  You can also broil them, but you have to watch them closely!!!!  They cook fast once they start and they burn quickly.

Dressing:
1/4 cup granulated sugar
1/3 cup oil
1/4 tsp salt
1 tablespoon red onion, chopped
3 tablespoons cider vinegar

Mix the ingredients in a blender and pour them over the salad.
