Crispy Potato Wedges
These are a family favorite!
1/4 cup olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried basil
1/2 tsp thyme
1/2 tsp oregano
1/4 tsp paprika
4-6 potatoes
1/4-1/2 cup grated Parmesan cheese
Combine olive oil and seasonings in a bowl.
Scrub unpeeled potatoes well. Cut each potato in half lengthwise and then in thirds again. This forms the wedges. You can slice them thicker or thinner depending on whether you want them crispier or more chewy.
Coat each slice in the seasoned oil. I just put them all in the bowl and mix them up to coat them well. Spread the seasoned wedges in a single layer on a jelly roll sized pan.
Bake them at 450 degrees for 15-20 minutes. Sprinkle them with the Parmesan cheese. Return them to the oven and bake them 15-20 minutes longer.
