GF Sugar Cookies


GF sugar cookies
Gluten Free, Dairy Free

Dry ingredients mix:
1 cup brown rice flour (or white rice)
½ cup GF oatmeal flour
½ cup cornstarch (potato starch)
1 tsp xantham gum
½ tsp baking powder
½ tsp salt

Wet ingredients:
1 stick butter or dairy free butter
1 cup sugar
1 Tbspn packed brown sugar
1 large egg
2 tsp vanilla extract
1 tsp almond extract

1-Preheat oven to 375 degrees.  Line your cookie sheet with parchment paper so the cookies don’t brown to much on bottoms.

2-Add dry ingredients, oatmeal, brown rice, cornstarch, xantham gum, baking powder, salt, together in a bowl and mix with fork. Set aside.

3-In a large electric mixer, beat butter (softened), granulated sugar  and brown sugar until very smooth and creamy about 1 minute.  Beat in the egg, vanilla, and almond extract, mix until creamy and smooth again.

4-add dry ingredients and mix until blended.  Refridegerate for about 30 minutes.

4- Roll out dough using rice or oatmeal flour.  Cut with cookie cutter and place on parchment paper already on pan.

5-Bake at 375 degrees for 12 to 15 minutes. 

6-Cool and frost!
