GF sugar cookies
Gluten Free, Dairy Free
Dry
ingredients mix:
1
cup brown rice flour (or white rice)
½
cup GF oatmeal flour
½
cup cornstarch (potato starch)
1
tsp xantham gum
½
tsp baking powder
½
tsp salt
Wet
ingredients:
1 stick
butter or dairy free butter
1
cup sugar
1
Tbspn packed brown sugar
1
large egg
2
tsp vanilla extract
1
tsp almond extract
1-Preheat
oven to 375 degrees. Line your cookie
sheet with parchment paper so the cookies don’t brown to much on bottoms.
2-Add
dry ingredients, oatmeal, brown rice, cornstarch, xantham gum, baking powder,
salt, together in a bowl and mix with fork. Set aside.
3-In
a large electric mixer, beat butter (softened), granulated sugar and brown sugar until very smooth and creamy
about 1 minute. Beat in the egg,
vanilla, and almond extract, mix until creamy and smooth again.
4-add
dry ingredients and mix until blended.
Refridegerate for about 30 minutes.

Roll out dough using rice or oatmeal flour.
Cut with cookie cutter and place on parchment paper already on pan.
5-Bake
at 375 degrees for 12 to 15 minutes.
6-Cool
and frost!
