GF Pecan Bars
Gluten Free, Dairy Free
Crust
2/3 cup
granulated sugar
½ cup dairy free butter or margarine
1
teaspoon vanilla
1 egg
1 cup GF oatmeal flour
1 cup tapioca flour
(use tapioca flour to push crust into pan if to soft. You can also add a little more if the dough
is way to soft.)
1-Mix all the above ingredients together and push into 9
x 13 pan pushing dough up the sides about ½ inch.
2-Cook for 10 to 15 minutes until lightly browned.
Filling
2/3 cup
packed brown sugar
½ cup
corn syrup
1
teaspoon vanilla
3 eggs
3-Mix all the above ingredients together in mixer. After it is mixed
add pecans below.
1 cup
broken pecans
4- Pour over cooked crust and return back to oven to cook for
another 25 to 30 minutes.
5-Cool bars
Melted
Chocolate
1 cup
semisweet chocolate chips (6 oz)
3 to 4
teaspoons butter
3 to 4
tsp oil
6-Melt the above ingredients in a small sauce pan on med-low until
all melted.
7-You can frost bars with chocolate or cut bars into squares and dip
one end of each bar into chocolate.
8-Let chocolate cool and harden and enjoy.
