Baked French Toast


Baked French Toast
Gluten free, dairy free

Ingredients:
1 loaf homemade Gluten free bread that is old (about 1 week but before it goes moldy)
8 eggs
2 cups Vanilla Almond Milk (or cows milk)
1/2 cup cashew almond cream or coconut cream (or dairy cream)
3/4 cup sugar
2 Tbsp. vanilla

Topping (Non dairy topping):
1/2 cup GF oatmeal (not flour)
1 cup brown rice
1 cup packed brown sugar
1 tsp nutmeg
1 tsp cinnamon
1/4 tsp. salt
½ cup smart balance flaxseed butter (put all ingredients in gallon baggie and knead all together with hands)

Original topping (Dairy topping):
1/2 cup GF flour (I would use brown rice, sweet rice or a GF flour mix)
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp salt
1 stick cold butter (put above ingredients in a bowl and cut in butter) 

1.  Grease a 9x13 pan with butter.  Tear bread into bite-size chunks and place evenly in the pan. I sliced up my gluten free bread and then tore each slice into bite size pieces.
2.  Mix together the eggs, almond milk, almond cream, sugar, and vanilla.  Pour evenly over bread.  Cover tightly and store in the fridge for several hours (I put mine in overnight....it was about 12 hours).
3.  mix up desired topping and place in a ziploc bag and put in fridge.
4.  When ready to bake, take pan and bag out of fridge.  Remove wrap and evenly sprinkle the crumb mixture over the top.  Bake for 45 minutes and 350 degrees.

Makes 12 large portions or 24 small portions.
