Brazilian Cheese Bread
I recently ate at a Brazilian Steakhouse and was introduced to this bread. It is super easy and fun and delicious. It is already Gluten Free so no adjustments necessary.
1 egg
1/3 cup olive oil
2/3 cup milk
1 1/2 cups tapioca flour
1/2 cup grated cheese**
1 teaspoon salt
Preheat oven to 400 degrees. Grease a muffin tin. This bread can be made in either a mini muffin pan or a regular sized muffin pan. It is more fun as mini muffins.
Put all of the ingredients into a blender and blend until smooth. Pour batter into muffin tin.
Bake in the oven for 15-20 minutes, or until the muffins are all puffy and just lightly browned. Let cool on a wire rack for a few minutes.
Enjoy these while they are warm. They warm well later.
**You can use whatever kinds of cheese you want. I have used queso fresco. I have also used a combination of parmesan and sharp cheddar.
