GF chocolate chip cookies with pecans
Step 1: Mix dry ingredients and set aside.
1 ¼ cup oatmeal flour
1 ¼ cup brown rice flour
1 tsp sea salt
1 tsp baking soda
1 tsp baking powder
2 tsp xanthum gum
½ cup tapioca flour
Step 2: In mixer cream the following.
1 cup soft butter
1 cup sugar cane
1 cup brown sugar
Step 3:Add eggs and vanilla, cream again.
2 eggs or (use flax egg substitute, see substitutions)
2 tsp vanilla extract
Step 4: Add the dry ingedients and mix
together really well again.
Step 5: Lastly add chocolate chips and pecans and mix well again.
2 cups chocolate chips
1 cup finely chopped pecans (I blend in blender)
The texture should be soft (little sticky) but not to soft.
I always use parchment paper when making cookies.
Refrigerate bowl of dough for 5 to 10 minutes before baking.
