Whole Grain Pancakes


Allergy free Whole Grain Pancakes

These pancakes are dairy free, gluten free and egg free

In mixer:

1 1/2 cup Brown Rice Flour (can use white rice flour)
cup gluten free Oatmeal Flour
½  cup Potato starch
½ tsp Xanthum Gum

Mix flours together in mixer just until blended.

Add in mixer:

1 ½ cup almond original milk (can use regular milk)
2 tsp butter dairy free, melted (I use smart balance flaxseed)
1/4 to 1/3 cup honey
½ cup applesauce
1/3 cup olive oil (can substitute canola oil)
2 TBSPN flax seed ground mixed with ½ cup warm water. (after this is mixed together then add to mixer) or 2 eggs
1/2 tsp salt

Blend until well mixed.

Add:
1 tbspn and 1 tsp baking powder.

Blend on high one more time for about 30 seconds until mixed, don’t over mix.

Let sit for a minute or two to activate the baking powder.  Pour onto hot griddle using a 1/4 cup measuring cup.  This makes approximately 24 to 30 pancakes.  ENJOY!

To spice it up a little: I will drop chocolate chips on top on each pancake while cooking.  You can use bananas, berries, you can add a pinch of cinnamon in the batter.
