Alfredo Lasagna

Alfredo Lasagna


My daughter wanted chicken alfredo, but I didn't have the right kind of noodles, so I improvised and it turned out awesome!! We came up with this:

9-12 lasagna noodles
3 chicken breast halves cooked, and diced
3-5 cups cooked broccoli
2 cups mozzarella cheese
2 cups Parmesan cheese
1 recipe Alfredo Sauce (posted earlier on this blog)

Prepare the alfredo sauce, and set aside while preparing the other ingredients.

Cook noodles according to package instructions (add a little oil to the cooking water).  Drain.

Spray a 9X13 baking dish with cooking spray.  Put a little alfredo sauce on the bottom.  Put a layer of noodles, a layer of chicken, a layer of both cheeses, and broccoli.  Top with alfredo sauce.  Make another layer of noodles, chicken, cheeses, and broccoli, again, top it with alfredo sauce.  Top this with another layer of noodles and more sauce.  Sprinkle more parmesan cheese on top.  Also sprinkle a little parsley for looks.  

Bake in a 350 degree oven for 30-40 minutes or until hot and bubbly.
