Crock Pot Chicken Cordon Bleu


8 chicken breast halves
1 cup gluten free flour mix
1 cup gluten free cracker crumbs (I use Crunchmaster Multigrain)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 tsp paprika
1/4 cup milk
2 eggs
Swiss cheese slices
cheddar cheese, sliced
thin ham slices

Combine the flour, cracker crumbs, salt, pepper, garlic and paprika in a gallon ziploc bag.

In a separate bowl, mix eggs and milk.

Slice cheese and lay out the cheese and ham you will need.  Also, get out some toothpicks and have them handy too.

For each chicken breast:  Lay on parchment paper on top of a chopping board.  Hammer flat with a meat hammer (I'm sorry, but the correct name escapes me right now:)  Pound the meat flat with the hammer.  On top of flattened chicken, layer 1 slice of swiss cheese, cheddar cheese, and ham slice.  Roll up the chicken with the cheese inside and secure with a toothpick.  Dip the chicken roll in the egg/milk mixture and then into the cracker crumb mix.  Place the roll in your crock pot.

Cook in the crock pot on high for 6 hours.

You could also cook this in the oven, if desired.
