Ham & Potato Delight
6-8 potatoes, cooked and diced
8 ounces sour cream
1/4 cup butter or margarine
1 can cream of chicken soup (see post for gluten free cream of chicken soup under substitutions)
1 1/2 - 2 cups cheddar cheese
1/3 cup green onions
1-2 cups diced ham
Dice the potatoes and cook them in a pot of boiling water until soft. Drain the potatoes.
Combine all ingredients and put the mixture in a 9X13" pan. Bake in a 350 degree oven for 30-45 minutes. It should be bubbly and melted together when it is done.
