GF Lemon Parmesan Crusted Salmon


GF Lemon Parmesan Crusted Salmon
1 salmon fillet, 1 1/4 pounds
2 tablespoons butter or margarine, melted
¼ teaspoon salt

Mix together in electric food processor or food chopper and mix really well until chopped:
1 slice GF bread toasted really well and broken into pieces
1/2 cup grated Parmesan cheese
2 teaspoons onion powder
4 teaspoons grated lemon peel
1/2 teaspoon dried thyme leaves

1-Heat oven to 375ºF. Spray shallow baking pan with cooking spray and line with parchment paper.

2-Pat salmon dry with paper towel. Place salmon onto parchment paper prepared in pan; brush with 1 tablespoon of the butter. Sprinkle with salt.


3- Stir in remaining 1 tablespoon butter. Press bread crumb mixture evenly on top of each salmon piece and cover the whole top.  Press into each piece.  Only bread the tops of each salmon piece, no need to turn over and bread other side.

Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately.
