Chicken Quesadillas
I do a lot of just throwing a bunch of one ingredient or another into the bowl until I get the end result that I want. Because of that, I'm not sure of the exact amounts that I use, but this should be about right. You can always throw in a little more of one thing or a little less of another if you want.
4 chicken breast halves, cooked and diced
1 4-ounce can diced green chilies
1 cup salsa
8 ounces cream cheese
1 1/2 cups grated cheddar cheese
1 1/2 cups grated pepper jack cheese
1 package GF taco seasoning mix
Corn tortillas
Stir the chilies, salsa, cheeses and taco mix together. Add the chicken and stir until well combined.
In a frying pan or on a griddle. Coat the pan with olive oil. Heat the oil. Put a corn tortilla into the pan or on the griddle. Spoon the chicken/cheese filling onto the tortilla and flatten and spread it around on the tortilla. Place another corn tortilla on top. Cook until golden and crispy on the one side and then turn and cook the other side.
Serve with diced tomatoes, lettuce, sour cream, guacamole, or anything else yummy you can think of.
This makes a lot and we often get a couple of meals out of it. My son loves taking leftovers to school and eating them for lunch.
