White Bread
A while back, I was talking about and exchanging recipes with a friend. As I was giving her my recipes for various things, I kept asking "do you want the original recipe or just the recipe with the changes that I have made?" After a while, she thought that was pretty funny since I almost never make anything the way the original recipe is written. Recipes are a work in progress. It is interesting to me to see what a recipe is when I either receive it from somewhere or make up my own recipe. I almost always make changes and turn something good into something I like even better. Katrina gave me her bread recipe quite a while ago. I had to make changes since I can't eat the oat flour that was in the recipe she gave me. Since then I have made multiple changes and I thought I would post what that bread recipe has morphed into. Katrina's recipe is really good and I would definitely make bread that way if I could, but this is a good recipe too. So now you have options:) My kids all love this--especially fresh and we have a little neighbor girl (not gluten free) who thinks this is the best bread ever!!
3 cups Gluten Free Flour Blend***
2 cups Potato Starch
1/2 cup Tapioca Flour
3/4 cup Amaranth Flour
1/4 cup Cornstarch
2/3 cup powdered milk
4 teaspoons Xanthan Gum
2 teaspoons Sea Salt
1 teaspoon Pectin
2 1/2 cups warm water
4 Tablespoons Honey
2 Tablespoons Yeast
1/4 cup extra virgin olive oil
1/4 cup applesauce
1/2 teaspoon apple cider vinegar
1/2 teaspoon lemon juice
3 eggs
In a separate bowl, combine the warm water, honey, and yeast. Let stand while you prepare the other ingredients.
In a stand mixer, combine the olive oil, applesauce, apple cider vinegar, lemon juice, and eggs.
In a large bowl, combine all the flours and cornstarch, milk, xanthan gum, salt, and pectin. Stir them until well combined.
In your stand mixer, now add the yeast mixer to the mixture already in there. When well combined, add the flours and mix it for 5-6 minutes. Add the dough to your bread pans prepared with cooking spray. (This dough makes enough for two large bread pans or three smaller sized bread pans.)
Spray some plastic wrap with cooking spray. Cover each bread pan with sprayed plastic wrap and allow the bread to rise. After the bread has risen, bake in a 350 degree oven for 45 minutes.
Remove from bread pans immediately and allow to cool on wire racks.
**My GF flour blend
1 cup white rice flour
3/4 cup sweet rice flour
1/2 cup potato starch
1/2 cup tapico starch
1/4 cup cornstarch

So true! Recipes are a work in progress. But that's what I like about them. I need flexibility in my life. :)
