Waffles

The Best Waffles!

At our house, we love waffles!  I previously posted a waffle recipe on this blog, and it is a truly delicious recipe.  However, I have decided that I really like amaranth flour and so I have been experimenting with it in several areas.  I have come up with a waffle recipe that is beyond awesome!  I really love what the amaranth does for the flavor of these waffles. Although I haven't tried it yet, you should be able to cook these as pancakes, if you want to.

3/4 cup brown rice flour
3/4 cup sweet rice flour
1/2 cup potato starch
1/4 cup amaranth flour
1/4 cup tapioca starch
1 Tablespoon baking powder
1/4 teaspoon salt
3/4 teaspoon xanthan gum
2 Tablespoons brown sugar
2 eggs
1/4 cup butter, melted
2 cups milk

Combine flours, baking powder, salt, xanthan gum, and brown sugar.  Whisk well.  Set it aside.

In a mixing bowl, blend, eggs, butter, and milk.  Add the flour mixture and blend well.  (You can mix it with a wire whisk, if you want.  It just takes longer.)  You may need to add a little more milk if it is too thick.

Bake them in the waffle iron of your choice.  I use a 6" round waffle iron.  For my iron, I put approximately 1/3 cup of batter in at a time.  This recipe makes about 10 - 6" waffles.

I like to double the batch and bake them all.  I then put them in the freezer after they have cooled off. You can warm them later in the toaster or the microwave and it is a quick and easy breakfast.
