Step 1:In
crockpot add:
1
(2 ½ to 3 lb) cooked rotisserie chicken, cut up and skin removed but in bottom of
crockpot.

cups water
Step 2:In
blender add the following and puree
1
large can (10oz) Ro-Tel tomatoes
1
medium onion
4 to 5 baby carrots
2
to 4 Tbspns minced Cilantro
1 cup spinach
Pour
pureed mixture into crockpot
Step 3:Add the following spices and last few ingredients

tsp parsley

Tbspn soup base, chicken flavoring
1
tsp lemon pepper seasoning
1
large garlic clove
1 ½
cups unsweetened Almond Milk or Lite Half and Half
1 can black beans
1 can black beans
Step 4:Cook
2 potatoes and puree them. Then add them to crockpot.
Cook
on high for 2 to 4 hours.
If
the soup is to thick add a little water to thin it down to desired consistency.
Serve
with:
Cheddar
cheese
Monterey
jack cheese
Tortillas
chips
Sour
cream
Lemons
Black
olives
Thin
tortilla salad chips
Avacado
