Gluten free/milk free
1 ½ cups kats GF flour blend or GF flour blend of choice
1 cup Brown rice flour
½ teaspoon sea salt
¼ cup brown sugar
¼ cup white sugar
1 teaspoon pectin
6 eggs, room temperature and beaten
½ cup melted Earth balance butter
4 cups Coconut milk
2 teaspoons vanilla
1 teaspoon butter flavoring, optional
Directions:
1-In a large bowl combine all the dry ingredients, GF flour blend, brown rice flour, sea salt, brown sugar, white sugar.
2-In mixer beat all 6 eggs. Add milk, melted butter, vanilla, butter flavoring.
3-Add flour mixture into egg mixture and blend just until blended and smooth.
4-Pour onto hot rounded pan and swirl around until flat, like a gorilla shape. Cook for about 30 sec to minute. Turn over and cook the other side until browned.
5-Serve with fruit of choice, strawberries, blueberries, bananas, raspberries, cool whip or whipped topping. You can sprinkle cinnamon and sugar. You can do anything with these. Enjoy!
