Orange Julius made Healthier


I got a blendtec for Christmas from my husband.  I love it!  I believe everything taste better through a straw and I think my kids do too!  So the last couple recipes I have posted I have used with a blentec blender.

Orange Julius made Healthier
Dairy Free, Gluten Free
3 Oranges, peel cut off the outside with just the white remaining
2 cups coconut milk
1 cup pure cane sugar or try coconut sugar
2 to 4 tsp vanilla flavoring
15-24 ice cubes, depends on how much ice you like

1-Place the first two ingredients into your blentec.  Blend on juice cycle until complete.   
2-Add the rest of the ingredients onto blender in order with the ice last.  Blend on the smoothie cycle until complete.

So yummy!

Blendtec Ice Cream

Blendtec Ice cream (Frozen yogurt)

I just got a Blendtec for Christmas and what a marvelous machine it is!

I made my first Strawberry Ice Cream tonight with dinner and it was delicious!

Strawberry Dairy Free Ice Cream
Dairy Free, Gluten Free

2 Cups Silk Coconut milk (can use any brand mine favorite it Silk)
3 Tablespoons sugar
2 Tsp Vanilla
3 cups Frozen Strawberries

Use the Ice Cream setting and blend until it stops.  I actually had to use the speed button also and puree it at speed 10 for about an additional 20 seconds.

So yummy and Enjoy!




Creamy Butterscotch Syrup (Dairy Free)

Butterscotch Syrup
Gluten free/Dairy free/Egg Free

This is a favorite family recipe that I think started with my older sister.  It is usually made with regular cows milk so I don't make it.  I finally ventured out and made it dairy free.  To be honest...I think this tastes better then then regular recipe, enjoy!

Ingredients:

1 cup dairy free butter (my favorite is Earth Balance)
2 cups sugar
1/2 cup Vanilla Almond Milk (I use Silk)
1/2 cup Vanilla Coconut MIlk (I use Silk)
1 Tablespoon Lemon Juice

1 tsp baking soda
2 tsp Real Vanilla

Directions:

Put in a large measuring cup both the almond milk and coconut milk.  Add the Lemon juice and set aside just for a couple minutes.

In a medium sauce pan put butter, sugar and milk that you mixed earlier.  Bring all three ingredients to a boil over medium heat.  Remove from heat and add the baking soda and vanilla right away.  Stir and mix it into syrup.  Lets sit off heat while you mix up your favorite pancakes, waffles, french toast, etc.

This syrup is so yummy it is our favorite family syrup for Christmas and birthdays.

Coconut pancakes

Coconut Pancakes, In 3 steps
Dairy Free, Gluten Free
Modified for Bob's Red Mill


Can be made up ahead of time in your blender and stored in refrigerator or mixed in your mixer and cooked fresh.

Ingredients:

1 Cups Brown Rice Flour
2/3 cup Coconut Flour
4 Tablespoons Potato Starch
2 Tablespoons Baking Powder
1 Tablespoon White sugar
1 Tablespoon Brown Sugar
3 Eggs
1 1/2 cups Coconut Milk
1 1/2 cups Almond Milk
1/3 cup lemon juice

Directions:

1-Mix both milks and lemon juice and set aside.

2-Mix all dry ingredients together. 
In Blender:Pulse dry ingredients a few times to mix together.
In Mixer:Blend dry ingredients together just for a few seconds.

3-Add wet ingredients.
In blender: Blend until well mixed
In Mixer: Mix until well mixed and creamy.

If batter is to think add a little extra milk.  But gluten free pancakes have a little thicker texture so don't add to much if any. These could easily make great waffles as well.  I haven't tried it because my kids prefer pancakes but give it a try!

In mixer: Cook on hot griddle, and enjoy!

In blender: If storing pancakes over night.  Place lid on blender and place blender in refrigerator until morning.  In the morning pusle the made up batter on blender a few times to mix it up once again and cook on hot griddle.
