GF Bread


Kat’s GF Whole Grain Bread
Yields 2 large loafs


Double loaf recipe:

Step 1-Mix all the dry ingredients and set aside:
2 ¼ cups Oatmeal flour
2 cups Potato Starch(not flour)
1 cup Brown Rice Flour (can use flour blend if needed)
½ cup Tapioca Flour
¼ cup Cornstarch
4 tsp Xanthum Gum
2 tsp Sea Salt
1 TBSPN ground flax

Step 2-Heat water and then add the honey and yeast.  Stir well and set aside to let yeast activate.
2 ½ cups warm water (110 to 115 degrees)
3 TBSPNS Honey
3 PKGS Yeast (6 tsp)

Step 3- In Bosch or large mixer add all the ingredients below.  Mix together well.  
¼ cup Extra Virgin Olive Oil
¼ cup applesauce (plain nothing added)
½ Tsp Apple Cider Vinger
½ Tsp Lemon Juice
3 eggs

Step 4-Add the yeast mixer to the wet mixture already in Bosch.  Mix well.  Add half the flour, mix and then add the other half the flour.  Turn on Bosch and let mix for about 5 minutes.  Let stand for 1 minute.  Test the consistency of the bread.  It should be a really thick brownie texture.  If to thin then use the extra flour listed below and slowly add a little flour about ¼ to ½ cup at a time.  Mix after each scoop of flour is added. 

1/2 cup extra oatmeal flour and 1/2 cup extra brown rice flour for thickening dough at the end, only if needed

Step 5-Spray 2 bread pans with extra virgin olive oil.  Scoop the bread dough into each pan until the dough is evenly distributed between each pan.  Use spatula and level out each loaf smoothing the top. Cove and let rise until double in size, about 30 minutes.

Step 6-Cook at 350 degree oven for about 45 minutes.

12 tsp Yeast

Main flour substitutions!

It costs a lot to feed a family of six but it costs a lot more to feed that same family when 5 out of the 6 people have to eat Gluten Free.

Bottom line, I am Frugal and I don't want to spent $50.00 a week on just boxed, or frozen bread for my family. At one point I was spending around $100.00 a week just buying, bread, waffles, chicken nuggets, etc. gluten free.  I think that is ridiculous so I had to start cooking and figuring out how to cook healthy but cheaper.

I have tried and failed many times but here are the flours that I use in all my cooking and baking without fail.

1-Augason Farms GF rolled oats, blend it up in my Bosch blender until it is consistency of flour.
2-Whole Brown rice (grind it in my wheat grinder)

Products then tend to be a little more expensive but important in GF cooking and Baking
1-Xanthum Gum, Walmart sells this for around $13.00 but you can find it online cheaper sometimes.
2-Tapioca flour
3-Potato Starch

I buy Augason Farms GF rolled oats and I grind it in my Bosch blender to make my oatmeal flour.  I also buy Bob's red mill GF oatmeal and do the same with it.  Both are good quality products and I have never had a contamination issue or reaction.  I live in Salt Lake City, Utah area so I get my Augason Farms rolled oats from their outlet store in Salt Lake.  I buy the Bob's oatmeal at Walmart or off vitacost because they are the cheapest usually.

The other flour I use a lot of is brown rice flour.  I actually buy whole (usually organic) brown rice and I grind it fresh using my wheat grinder (that doesn't grind my wheat). This works well.  If you don't have a wheat grinder you can buy the brown rice flour at the store as well.  Vitacost.com sells it cheap and so does walmart but they are not cheaper then grinding it fresh.
