Southwest Turkey Soup

Southwest Turkey Soup

It's now after Thanksgiving and I was looking for a way to use up some of my leftover turkey.  This soup turned out fantastic!! My kids were worried about having something new, but they all loved it.  I hope you enjoy it too.  Now I just have to figure out how to use the rest of my turkey.  I have way too much left over:)

2 cups diced, cooked turkey
5 cups chicken stock
2 cans diced tomatoes
1 can chopped green chile peppers
2 onions, chopped
2 cans black beans
1 cup brown rice, uncooked
2 tsp garlic powder
1 tsp cayenne pepper
1 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper
grated Pepper Jack and/or Cheddar cheese

In a large cooking pot, combine all the ingredients except the cheese.  Bring it to a boil and then reduce heat and simmer 20-30 minutes or until your rice is cooked.

Serve with cheese sprinkled on top.
