Cake Batter:
2 cups GF Flour mix1 teaspoon xanthan gum
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup sugar
1/4 cup butter
1 egg
1/2 cup buttermilk
1 teaspoon vanilla
2/3 cup applesauce
In a mixing bowl, combine sugar, butter, egg, buttermilk, vanilla, and applesauce. In a separate bowl, combine the flour, xanthan gum, baking powder, salt, and cinnamon. Add dry ingredients to the mixing bowl. Combine thoroughly and pour into an 8"X8" baking pan. Spoon streusel topping (see below) over the batter.
Streusel Topping:
1/2 cup flour1/3 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter
In a bowl, mix flour, brown sugar, and cinnamon. Add the butter and use a fork to cut it in with the dry ingredients. It should be small crumbles by the time you are done cutting it all in. Spoon the topping over the cake batter.
Bake in a 375 degree oven for 45-55 minutes, or until golden and cooked thoroughly (a toothpick should come out clean).
